- 2 - 3 large jacket potatoes
- 2 tablespoons olive oil
- 2 - 3 cloves garlic crushed

Instructions
- Preheat an oven gas 7 / 190*c.
- Cut each potato in to wedges by cutting in 1/2 length-wise and cutting 3 triangle wedges out of each half. (or 4 if very large)
- Place in a bowl, add the the other ingredients and toss until well coated.
- Place on an oven tray skin side down and bake in for 40 -45 minutes or until soft and golden.
Recipe Notes
Variations -
Omit garlic for plain
Paprika & Oregano - 1 teaspoon paprika & 1/2 level teaspoon dried oregano
Rosemary & Lemon - zest 1 lemon & 1 teaspoon fresh chopped rosemary - - cook on the stalks for extra flavour
Parmesan & Mustard - 1 teaspoon fine grated parmesan cheese & 1/2 teaspoon Colmans mustard
